salad dressing

This dressing suits a lettuce salad in spring just as well as roasted vegetables in the middle of winter.

3T olive oil
1T apple cider vinegar
squeeze lemon juice
a few cloves of garlic, crushed
freshly ground black pepper
1t maple syrup (or honey or a pinch of raw sugar)
mixed herbs fresh from the garden
