Uncle Yew Cheong’s Chicken Curry

Years ago when Uncle came to NZ he cooked a curry for us. We scribble down notes as the miracle unfolded in front of us in the kitchen.

1/2 t salt
onion, chopped finely
ginger
garlic
2 stalks lemon grass
curry leaves
   Fry in oil

3T spicy curry powder
coconut milk
   Mix to a paste (avoids burning)
   Reduce heat and add to above
   Cook until aroma is right – the paste and onions will darken

Chicken pieces
   Add, stir and cook for half an hour, adding a little water as necessary

Potatoes, quartered lengthwise
   Add and cook until tender
