carrot salad

Winter is more about soups than salads, but the sunny colours of this one is promise the season to come.

1C raisins or sultanas
4T olive oil
juice of one lemon
juice of one orange
1t paprika
1/4 t salt
   Soak for at least 4 hours

500g carrots, cut in thin strips
500g apples, cored and diced
1C sunflower seeds, roasted
1/2 C parsley, finely chopped
   Combine and pour the dressing over
