orange cheesecake

125g biscuit crumbs
1/2 t orange rind, finely grated
75g butter, melted
   Press onto 20cm pie dish base

4t gelatine
3T cold water

250g soft white cheese
90g caster sugar
1/2 t orange rind, grated
1 egg yolk
   Beat until smooth
   Dissolve gelatine over a low heat and beat into cheese in a slow stream

5t orange juice or liquer
200ml sour cream
   Stir in

1 egg white, stiffly whisked with pinch of salt
   Fold in
   Pour into crust
   Chill for 24 hours
   Decorate as desired (ooh, fancy eh!)
