strawberry cream

I’m not sure what’s going on in our garden – the winter veges are refusing to grow, but there are half a dozen strawberries. It is the middle of winter. It should not be.

500g strawberries
175g shakkar
   Sprinkle berries with shakkar
   Stand 30 minutes and mash

4t gelatine
3T water
   Soften gelatine and dissolve over low heat
   Stir into berries and set aside until beginning to thicken

2 egg whites, stiffly whisked
400 ml cream, whipped
   Fold into berries and chill
   Serves 8

This could be made with pineapple and a sprinkling of ginger….or mandarins with a squirt of lemon juice (although it really is a summery dessert and mandarins appear in our garden in winter)

I imagine this could also make a nice cheesecake-y filling. mmmmm
