rice pud

There’s the long version, the baked version and the quick everyday version:

1/3 C rice
2 C milk
   Steam 45 minutes

2 egg yolks
1t vanilla
1/4 C sugar
   Combine and add to rice

2 egg whites
1/4 C sugar
   Take rice off heat
   Fold in

1/2 C rice
1/2 C sugar
1/2 t salt
1 t nutmeg
4C milk
   Combine and pour into greased baking dish.
   Bake covered at 150ºC for two hours, stirring occasionally
   Uncover and brown slightly

1/3 C rice
1/4 C sugar
1l milk
   Soak overnight
   Cook over a low heat for 15-20 minutes on the stove

   We often eat this for breakfast, especially in winter.
   And the good thing is, it develops no skin!
