on the other side of the family

When we lived in Poland as newly-weds Poh-poh (Rob’s mum) would sometimes send us a new recipe she had tried or an old favourite. This one we managed to *somehow* make despite not having Weetbix or golden syrup or coconut or a sponge roll tin or a microwave – and the only condensed milk came in a tube instead of a tin….. Grandpa’s bracketted recommendation was well worth listening to, even considering the adaptations we had to make.

Weetbix DELUX

3 Weetbix, crushed (we used bran flakes)
3/4C sugar
1t baking powder
1C flour
1C coconut (we may have used cornflakes which is nothing like coconut at all, but which worked OK – another time we found KOKOS)
    Mix together

4oz butter
   Melt and mix in to dry ingredients. Press into sponge roll tin.
   Bake at 350°F for 15 minutes.

1 1/2T golden syrup
1T butter
   Melt (in a microwave or on the stove top)

1/2 can sweetened condensed milk
   Add and mix. Spread over the base.
   Return to oven until caramel is all bubbly (approximately 3-5 minutes)

Ice with chocolate icing.

We still don’t have Weetbix in the cupboard, but we do have plenty of wheat bran left over from sifting our flour…..and we could use a whole tin of condensed milk and so we might as well double the recipe…..

  1. mmm sounds good! we have a woeful lack of SCM for some reason.. that some reason being that *someone* likes to eat it straight out of the can!
