dress that salad

While we’re on the subject of salad dressings (which we were yesterday), we might as well include mayonnaise.

The stuff you can buy in the supermarket is not much short of a chemical experiment…and so we decided to make our own. When I say *we*, I mean eldest daughter took it upon herself to whip up a batch and she was so good at it, she has been doing it for years now. I have never progressed past vinaigrettes or yoghurt sauce! But eldest daughter has taught next-sister-in-line. (which is not to say the boys couldn’t do it, just that either they haven’t or I don’t remember if they have)

1 egg yolk (and the white too, if you like)
1T malt, white or wine vinegar or lemonjuice
1/2t salt
pinch cayenne pepper
1/4t dry mustard
   Mix together – either with whisk or in a blender.

1C olive oil
   Add whilst beating in a slow steady stream until thick.
   If too thick, add extra vinegar – or some milk.

My Easy Pesy Dressing
2T fresh parsley, chopped
1T fresh chives, chopped
1T fresh lemon balm, chopped
2t fresh thyme, chopped
2t fresh rosemary, chopped
1/2t lemon rind, grated
1/2t salt
black pepper
1/4t sugar
1/4C vinegar or lemon juice
1/2C oil
   Put in a screwtop jar and shake as hard as you can.

Even Easier Youghurt Dressing
1C natural yoghurt
a splash of olive oil
1T lemon juice
1/4 t mustard powder
a few cloves of garlic, crushed
   Mix to combine
   Mashing in an avocado is really yummy too
