a gifted salad

We were given two little bags of Moroccan couscous – just add water and the dehydrated apples, sun-dried tomatoes and spices would zing into life. They did.

We were given sunflower seeds, and I already had sesame seeds.

We were also given a bag of multi-coloured spiral pasta. More just add water!

We were given fried shallots. No need to add anything to them, but we add *them* to absolutely everything.

A roasted pumpkin, chopped up.
Half a watermelon, also chunked.
An onion, finely chopped.
Chives and oregano fresh from the garden.

We threw the whole lot together in a Very Big Bowl, drizzled over some olive oil and balsamic vinegar and called it dinner, served on a bed of lettuce taken straight from our garden (only planted it three weeks ago – very satisfying).

As we gave thanks I remembered those who had contributed. THANK YOU.

    Since you’ve been back have you come across Think it stands for ‘out of our own backyards – kind of a co-op-y homegrown/self-sufficient type collective. Am sure they have people/groups out West?
