loafin’ through childhood

I’m not sure who Nancy was, but when I was a girl, we ate her loaf frequently.

NANCY’S LOAF

1C flour
3/4C sugar
1/2t baking powder
1C milk
1C coconut
1C sultanas
1/2C walnuts (optional)
Mix together and bake at 180ºC for one hour

When we weren’t eating Nancy’s loaf, we would enjoy Station Loaf. Still unsure of the significance of the name, I wonder about it every time I make it!

STATION LOAF

2C raisins
1C walnuts
2 1/2C water
1C sugar
2 rounded T butter
Simmer for 5 minutes and cool

1t baking soda
Stir in

3 1/2C flour
1/2t salt
1t mixed spice
2t baking powder
Add and mix well
Pour into a loaf tin and bake at 180ºC for 40-60 minutes
