If you take a boiled potato, slice the top off and scoop out the inside, you can mash it up all nice-n-creamy with a bit of butter and milk. You could then pile it back into the potato shell, but it’s even better if you’ve got (as we did) some leftover spaghetti sauce….dollop that into the shells first and then pile up the potato…..you can grind over some black pepper and even sprinkle on some chilli powder if you want a kick. Pop the potatoes into the oven until they have heated through (about enough time to run down to the garden and pick some lettuce and herbs for a salad on the side). Sprinkle on some grated cheese and return to the oven until it has melted.
