potatobeet curry

You won’t get a cheaper tastier meal than this.

1T oil
2 brown onions, chopped
2 cloves, garlic
1T fresh ginger
1t ground nutmeg
2t ground cumin
1t cayenne pepper (or less if you don’t do spicy)
1t ground turmeric
1t garam masala
fry up together until nice-n-smelly

1/4C fresh coriander leaves
1l stock (vegetable, chicken or beef; your choice)
1.5kg potatoes, chopped
add and simmer until the potatoes are tender

huge bunch of silverbeet, chopped
throw in at the last minute and cook only until the silverbeet wilts

This is another recipe that is ideal to make in a cooking bag – I add the silverbeet at the same time as the other ingredients and don’t worry about the fact that it ends up well-cooked 😉
