lentil-lovers’ curry

1T olive oil
2 large onions, chopped
6 cloves garlic, crushed
2T black mustard seeds
1T cumin seeds
4t ground turmeric (or use some of your magic mix)
Fry up these babies

2x 400g can tomatoes
6C vegetable stock (or beef or chicken if you are not vego and have some on hand)
3C red lentils
2 carrots, chopped
2 potatoes, chopped
Add and simmer until veges are soft (or bring to the boil and then throw the pot into your cooking bag)

1C coconut milk
1C fresh or frozen peas
Just before serving add these and cook until heated through



  1. Wow, this looks so yummy. My son and I love to cook curries together. He is a recent vegetarian, and will love this.
