Spaghetti Noodles
If you’re not concerned about phytates, you can just do the easy version. A very dear friend from Romania taught me how to do this by hand and I think of her Every Single Time I make them.

   

 

Crack an egg into a bowl. Fill half the eggshell with water and add that to the egg with a pinch of salt. Mix in flour until it feels right! Knead for a good 5 minutes and leave to sit for quarter of an hour. Roll out and cut up. Or use a fancy-schmancy machine. Leave for an hour before cooking in boiling salted water.

 



If the phytate issue does concern you, then you have no choice but to make your own; running to the supermarket will not be an option. You can sprout your grains, dehydrate them and then grind them before doing the above or you could try these sourdough egg noodles. I haven’t tried that recipe, and to be honest I feel good enough about making my own pasta-phytates-n-all that I often forget I could be taking the next step in healthy nutrition!
