Madras Beef Curry

Do you want the real recipe or the what-we-do-to-feed-11-people-from-750g-meat version? OK, the latter it is.

1 onion, chopped
Fry in butter until browned

4T Madras Curry Paste
Add and stir for 1 minutes.

750g chuck steak, cut into 2.5cm cubes
6 potatoes, cubed
Add and cook, stirring, until coated with the curry paste.

1/4C tomato paste
1C beef stock
Stir in, reduce heat and simmer, covered for 1 1/4 hours, and then uncovered for 15 minutes (or transfer it to a cooking bag once all the ingredients are heated through).

(The real recipe uses no potatoes, 1kg of meat and feeds four)
