happy lantern festival birthday

Carrot Cake

2C flour
2t baking soda
1t baking powder
1t salt
2t cinnamon
Combine

1 3/4C sugar or shakkar
1C olive oil
3 eggs
1t vanilla
Add and mix until smooth

2C carrot, grated
1C coconut
1C walnuts, coarsely chopped
410g can crushed pineapple, drained
Stir in until well blended.
Pour inot greased, floured tin.
Bake at 180°C for 45 minutes

We used muffin tins for these particular ones, but it seems to be less crumbly as a cake.

Cream Cheese Icing
4T butter, softened
1/2C cream cheese
Beat well together

1t lemon rind, grated
2C icing sugar
Mix in until well combined
