summer eggs

half a dozen green, red and yellow peppers form the basis of this dish, sliced up chunkily because I was in a hurry

add a dozen small tomatoes, quartered

some cubes of cheese

a handful of fresh basil leaves

pour over a dozen eggs and milk (how much? I don’t know, maybe 300ml) whisked together

grind some pepper and dollop on some chilli chutney for good measure

pop it all in the oven and while it’s cooking, fry up some chopped bacon (300g), go down to the garden for a cauliflower (because that’s what’s ready for eating tonight) and then add it to the bacon, which you might as well leave in the pot to save making more dishes

dinner is done (serves 11)
